Eorigul-Jeot(어리굴젓) in Korea is a winter delicacy made with salted oysters and spicy seasoning. I guess traditionally it was fermented for a couple of days at room temperature but these days people skip this process and it goes directly to the fridge short hours after being salted. It is a great side dish for rice. You can make this Eorigul-Jeot at home but most people buy them from the market.
